During the month of September, Reside residents can enjoy moto’s 14-course tasting menu for $150 on Tuesdays, Wednesdays, and Thursdays. Meanwhile, iNG will offer a six-course tasting menu for $60 (beverage pairings not included) and a 10-course tasting menu for $80 (beverage pairings not included) Tuesday-Saturday.
Recently, Reside Concierge Manager John Dowd got a chance to pick Chef Cantu’s brain. To learn who his favorite chefs are, where he likes to eat, and how you can help in the fight against hunger, keep reading.
Question: Are you more of a scientist than a chef or do both gifts have to work well together for you?
Answer: I’m just someone with a lot of ideas. My team is the reason why we put ideas into practice.
Q: Which holds more appeal/is a challenge for you: cooking, design/invention, or media?
A: Delicious food is the biggest appeal and the biggest challenge.
Q: What’s the biggest thing “regular” folks can do to combat world hunger, an issue very close to your heart?
A: Become familiar with emerging technologies that support a non-gmo organic approach. Water reclamation collected from humid air is one, for example. Indoor farming is another.
Q: Who are some of your favorite chefs?
A: Matthias Merges, Burt Katz, Wylie Dufresne, Jeff Mauro, and many others.
Q: What are some of your favorite restaurants?
A: Burt’s Pizza, Yusho, Freddy’s Pizzeria in Cicero, The Bristol, Fat Rice, and Piccolo Sogno.
Q: Do you have a favorite dish or cuisine?
Q: What do you consider your cleverest invention?
A: Focus on what still needs innovating, whatever that is.
Q: What’s your next big thing?
A: I’m working on a few concepts set to launch in 2014. Can’t say what exactly.
